Position Overview:
We are seeking an exceptional Head Chef specializing in Cantonese Seafood cuisine to lead the culinary team at our prestigious fine dining restaurant. This is a senior role suited for a highly experienced and passionate chef with deep roots in traditional Cantonese cooking, particularly seafood, and a modern approach to presentation and menu development.
Key Responsibilities:
- Lead the kitchen team in executing high-end Cantonese seafood cuisine, ensuring excellence in quality and consistency
- Design and curate authentic Cantonese seafood menus, incorporating seasonal and premium ingredients
- Oversee daily kitchen operations, including prep, cooking, and plating standards
- Train and mentor chefs and kitchen staff, maintaining a culture of professionalism and excellence
- Ensure strict compliance with hygiene, food safety, and sanitation regulations
- Work closely with procurement to source top-quality live seafood and specialty ingredients
- Manage food costs, inventory, and wastage while maintaining premium standards
- Collaborate with F&B and service teams to deliver a seamless guest dining experience
- Innovate new dishes and modern interpretations of classic Cantonese seafood recipes
Requirements:
- Minimum 8–10 years of experience in Chinese fine dining, with at least 3 years as Head Chef or Sous Chef level specializing in Cantonese seafood cuisine
- Mastery in preparation of live seafood including lobster, crab, abalone, fish, sea cucumber, and shellfish
- In-depth knowledge of traditional Cantonese techniques, wok skills, steaming, braising, and double-boiling
- Strong team leadership, training, and kitchen management capabilities
- Exceptional plating and modern presentation aesthetics
- Culinary diploma or equivalent qualification preferred
- Fluency in Cantonese or Mandarin; English proficiency is a plus
- Ability to work under pressure in a fast-paced, high-end environment
Preferred Experience:
- Previous experience in luxury hotels, Michelin-starred restaurants, or premium Chinese fine dining venues
- Familiarity with banqueting and VIP/private dining services
- Experience in menu engineering and collaboration with international culinary teams
