Roles & Responsibilities:

Fish Processing:
  • Cut, fillet, and portion fish into specific sizes, shapes, or pieces as required by customer orders.
  • Remove bones, skin, and scales from fish while maintaining quality and minimizing waste.
  • Process fish for different markets accordingly to the Production Supervisor’s instruction.

Equipment Operation:
  • Safely operate various cutting tools and machinery, including knives, saws, and fish filleting machines.
  • Ensure that equipment is regularly cleaned, maintained, and sharpened to maintain efficiency and safety standards.

Quality Control:
  • Inspect fish for quality, freshness, and any defects before processing.
  • Adhere to food safety and hygiene standards throughout the processing and handling stages.

Packaging and Storage:
  • Pack processed fish in appropriate containers for order delivery.
  • Ensure proper storage of fish, including the use of refrigeration or freezing, to maintain freshness.

Health and Safety:
  • Maintain cleanliness and organization in the work area, following all sanitation protocols.
  • Follow safety guidelines to prevent accidents and injuries in the workplace.

Inventory Management:
  • Keep track of fish stock levels and notify supervisors of any shortages or excesses.
  • Assist in the rotation of stock to ensure the use of older fish first (FIFO method).

Others:
  • Any other work as assigned.

Job Requirements:
  • Permanent night shift (10pm to 7am), 6-days week from Tuesdays to Sundays.
  • Able to work in a very cold environment due to frozen seafood storage.
  • Ability to work in a fast-paced environment and under time constraints.

Qualifications and Skills:
  • GCE ‘N’ Level academic qualification or equivalent. Previous experience in fish cutting, meat processing, or a similar role is preferred.
  • Ability to operate various cutting tools and machinery.
  • Knowledge of food safety regulations and standards.
  • Knowledge of fish species, anatomy, and best practices for filleting and portioning.
  • Good communication and teamwork skills.

Experience:
  • At least 3 years of working experience in a related field.
