Job Overview:
Le Clos is seeking a creative and disciplined Chef de Cuisine to lead its kitchen operations. The ideal candidate will combine culinary excellence with operational leadership to deliver simple yet refined food that complements the wine-focused concept of Le Clos.
Key Responsibilities:
- Lead and manage all kitchen operations, including food preparation, team supervision, and hygiene standards
- Design and execute menus that align with the wine-first identity of Le Clos
- Ensure consistency and quality in taste, presentation, and execution
- Train and develop kitchen staff; foster a positive, respectful team culture
- Monitor food costs, portioning, wastage, and inventory to ensure profitability
- Collaborate with the General Manager for menu development, wine pairing, and events
- Maintain high standards of kitchen hygiene, safety, and cleanliness
- Ensure compliance with Singapore’s SFA and MOM regulations
Requirements:
- Minimum 5 years culinary experience with at least 2 years in a leadership role
- Background in modern European, French, or Mediterranean cuisine preferred
- Passionate about seasonality, simplicity, and working with premium ingredients
- Strong team leadership, communication, and organizational skills
- Ability to perform under pressure and lead by example
- Knowledge of food cost control, ordering, and supplier management
- Valid Food Hygiene Certificate required; familiarity with Singapore compliance standards
