Job Summary

Lead daily kitchen production and quality control for traditional Chinese desserts, managing recipes, ingredient ordering, stock, hygiene, and a small kitchen team to ensure consistent product excellence and efficient operations.

Responsibilities

  • Prepare traditional Chinese desserts following recipes and SOPs to ensure consistent taste, texture, sweetness, temperature, and portion size
  • Refine recipes, production methods, and kitchen workflow to improve product quality and operational efficiency
  • Plan daily preparation schedules and production quantities based on sales forecasts
  • Manage ingredient ordering, coordinate with suppliers, and control stock levels using FIFO and expiry date checks
  • Organize cold room storage and labeling to maintain ingredient quality and safety
  • Monitor and control food wastage and portioning to optimize costs
  • Supervise, train, and lead a small kitchen team during preparation and service to maintain high standards
  • Ensure compliance with food hygiene, cleanliness, and Singapore Food Agency (SFA) food safety standards
  • Operate kitchen equipment including induction hobs, combi oven, automated cooking devices, blast chiller, bain marie, and cold room
  • Collaborate with front-of-house staff to ensure smooth service during peak hours
  • Continuously improve kitchen workflow to enable efficient operation with a lean team

Preferred competencies and qualifications

  • Experience in Chinese desserts, Asian desserts, pastry, bakery, beverage production, central kitchen, or similar F&B production environment
  • Knowledge of black sesame paste, tong sui, tofu pudding, sago desserts, or traditional Asian desserts
  • Ability to follow recipes accurately and maintain consistent product quality
  • Understanding of kitchen hygiene, food storage, FIFO, and stock control
  • Skills in managing ordering and supplier coordination
  • Leadership skills to train and manage junior kitchen staff
  • Responsible, organized, clean, and hands-on approach
  • Ability to work effectively in a fast-paced F&B environment

  • Salary: S$3,200 – S$4,200 per month, depending on experience
