We're Hiring: Sommeliers (Junior to Head Sommelier)

We are preparing to launch an exciting new restaurant in Dempsey and are seeking passionate wine professionals to join our founding team.

Whether you are an emerging sommelier looking to develop your craft or an experienced wine leader ready to shape a world-class beverage program, we would love to hear from you.

We are currently hiring for:

  • Head Sommelier

  • Assistant Head Sommelier

  • Sommelier

  • Junior Sommelier

As a Sommelier, you will play a key role in creating exceptional guest experiences through thoughtful wine recommendations, impeccable service, and a deep understanding of our beverage program. Successful candidates will contribute to a culture of excellence, hospitality, and continuous learning.

Responsibilities will vary according to experience and position level.

Key Responsibilities

Guest Experience & Wine Service

  • Deliver exceptional wine and beverage service standards.

  • Provide wine recommendations tailored to guests' preferences and menu selections.

  • Present, open, decant, and serve wines with confidence and professionalism.

  • Create memorable dining experiences through beverage storytelling and genuine hospitality.

Wine Knowledge & Education

  • Maintain comprehensive knowledge of the wine list, producers, regions, vintages, and styles.

  • Participate in ongoing wine education and training sessions led by our Wine Director, Roberto Duran.

  • Confidently share wine knowledge with guests and team members.

Cellar & Inventory Management

  • Assist with receiving, storing, and organising wine inventory.

  • Maintain accurate stock records and inventory controls.

  • Support cellar management, stock rotation, and inventory accuracy.

  • Participate in regular stock counts and audits.

Teamwork & Collaboration

  • Work closely with restaurant management and service teams.

  • Contribute to a positive, professional, and high-performing workplace culture.

  • Support team training and development initiatives.

Leadership Responsibilities (Head Sommelier, Assistant Head Sommelier & Sommelier)

  • Mentor and develop junior team members.

  • Support the daily management of beverage operations.

  • Assist with wine purchasing, supplier relationships, and wine list development.

  • Drive beverage sales performance and profitability.

  • Uphold service excellence and operational consistency.

Additional Responsibilities (Head Sommelier)

  • Lead the overall wine program and beverage strategy.

  • Curate and maintain the wine list.

  • Manage purchasing budgets and supplier partnerships.

  • Develop wine pairings and bespoke guest experiences.

  • Lead recruitment, training, and performance management for the sommelier team.

Requirements

  • Passion for wine, hospitality, and guest service.

  • Previous experience in a restaurant, luxury hospitality, or fine dining environment is preferred.

  • Strong communication skills in Mandarin are highly advantageous, as we serve a diverse clientele of local.

  • WSET, CMS, or equivalent wine qualifications are advantageous.

  • WSET Diploma, CMS certification, or equivalent qualifications will be highly regarded for Head Sommelier candidates.
