About the Restaurant
We are building an ambitious and meaningful restaurant rooted in craftsmanship, ingredients and community.
Our dining room will reflect the same philosophy: thoughtful hospitality, deep product knowledge, and a beverage program that tells stories about the people behind what we serve.
Our goal is to build a restaurant worthy of the world's most discerning diners—one that could stand alongside the finest restaurants globally, while remaining anchored in the community that surrounds it. We aim to create an intimate place that is both ambitious and welcoming — a restaurant that pushes standards while remaining grounded in generosity and warmth.
We are seeking a Sommelier and Beverage Manager to join the founding leadership team and help build the restaurant from the ground up.
Role Overview

Core Responsibilities
Design and execute a focused and intentional beverage program that brings to life the restaurant’s commitment to excellence and focus on ingredients, craftsmanship and community
Restaurant Beverage Program
· Build and manage a meaningful wine/ spirits/ non-alcoholic/ tea/ coffee beverage program
· Design thoughtful pairing menus that bring the restaurant’s ethos to life
· Build strong relationship with producers, importers, and distributors
Guest Experience and Wine Service
· Create memorable dining experiences through beverage storytelling and genuine hospitality
· Deliver exceptional wine and beverage service standards
· Provide wine recommendations tailored to guests' preferences and menu selections
· Present, open, decant, and serve wines with confidence and professionalism
· Work effectively with the rest of the team to deliver a seamless service and a flawless experience for our guests
· Ensuring that the team maintains exceptional beverage service standards whilst complying to health, hygiene and safety standard
Business Growth
· Develop beverage sales strategies and drive beverage performance and profitability
· Develop beverage pricing strategy
· Develop and implement cost control strategies
Cellar and Inventory Management
· Effectively manage cellar and beverage inventory
· Build a system for receiving, storing, and organising wine inventory
· Maintain accurate stock records and inventory controls
· Support stock rotation, and inventory accuracy
· Lead regular stock counts and audits
Leadership, Training and Education:
· Maintain comprehensive knowledge of the wine/ beverage list, producers, regions, vintages, and styles
• Lead ongoing beverage education and staff training sessions
• Mentor and develop junior members
• Lead recruitment, service rehearsals, and performance management for the sommelier team.
• Foster a professional, collaborative and high-performance culture working towards a common goal
Required Competencies and Certifications
We are looking for a leader who combines deep hospitality experience, beverage expertise, and an entrepreneurial mindset.
· Passion for wine/ beverage, hospitality, and guest service
· Proven experience as a sommelier in a fine dining environment
· Strong communication skills in multiple languages is preferred
· WSET, CMS or equivalent wine certifications
· Other spirit/ tea/coffee credentials
