Assistant Sous Chef – Indian Cuisine

We are seeking a skilled and dedicated Assistant Sous Chef – Indian Cuisine to support our kitchen operations. The ideal candidate will have strong practical experience in both North Indian and South Indian cuisine, and the ability to work in a fast-paced, high-standard kitchen environment.

Key Responsibilities

  • Assist in the preparation and execution of Indian cuisine dishes.

  • Prepare naan, tandoori items, romali roti, prata, fried rice, and noodles.

  • Maintain excellent wok hei in fried rice and noodle dishes.

  • Prepare a variety of North Indian and South Indian gravies to consistent quality standards.

  • Support beverage preparation duties when required.

  • Assist with daily kitchen operations, mise en place, and food production.

  • Ensure food hygiene, cleanliness, portion control, and presentation standards are maintained.

  • Work effectively across rotating shifts, including weekends and public holidays when required.

Requirements

  • Strong hands-on experience in Indian cuisine.

  • Proficiency in:

    • Naan

    • Tandoori items

    • Romali roti

    • Prata

    • Fried rice and noodles with wok hei

    • North Indian gravies

    • South Indian gravies

  • Able to support beverage duties when needed.

  • Able to work in a team and under pressure.

  • Good kitchen discipline, cleanliness, and consistency.

  • Degree in Hotel Management, Catering, or Culinary Arts is required.

Preferred Attributes

  • Reliable, committed, and detail-oriented.

  • Good communication and teamwork skills.

  • Prior experience in Indian restaurants, banquet kitchens, or multi-cuisine establishments will be an advantage.
