Position: Baker (Chef De Partie)

Job Responsibilities

1. Production & Operations

  • Assist and support the Head of Production in executing daily operations with efficiency, precision, and attention to detail.
  • Plan and manage daily and weekly production schedules based on demand forecasts.
  • Coordinate with Sales and Operations teams to ensure timely fulfilment of orders.
  • Optimize production workflow to meet deadlines and maintain consistency in product quality.

· Ensure team competencyin baking techniques and standards

  • Perform mise en place and ensure minimal food wastage during production.

2. Food Safety & Compliance

  • Ensure full compliance with food safety and hygiene regulations (e.g., SFA standards in Singapore).
  • Maintain accurate records of production, temperature, and hygiene checks.
  • Assist in audits and regulatory inspections.
  • Adhere strictly to workplace safety policies and report any hazards or incidents promptly.

3. Inventory & Cost Control

  • Monitor and maintain par levels of all essential ingredients and goods to ensure uninterrupted production cycle
  • Ensure Par levels of stock are readily available
  • Track ingredient usage to control food costs effectively.
  • Implement waste reduction strategies and ensure efficient use of raw materials and utilities.

4. Equipment Management

  • Operate and maintain baking equipment (e.g., ovens, mixers, proofers) in good working condition.

· Ensure safe handlingof equipment and tools

  • Ensure proper usage to prolong equipment lifespan.
  • Coordinate equipment servicing and repairs when necessary.

5. Team Leadership & Training

  • Supervise and guide junior bakers, commis, and production staff.
  • Delegate daily tasks and ensure smooth workflow within the team.
  • Provide on-the-job training, coaching, and performance feedback.
  • Train new hires on recipes, SOPs, and proper equipment usage to ensure operational standards are met.

6. Documentation & SOPs

  • Develop and maintain Standard Operating Procedures (SOPs) for all bread, pastry, and cake production processes.
  • Ensure all documentation is accurate, updated, and aligned with operational standards.

7. Research & Development (R&D)

  • Assist in the development of new bakery products (bread, pastry, and cakes).
  • Test and refine recipes for scalability and consistency.
  • Contribute innovative ideas aligned with the company’s brand direction.

8. Additional Responsibilities

  • Required to travelinternationally to train bakers, trainers and manufacturers and to assist insetting up of production site.
  • Perform any other ad hoc duties as assigned by Management.

· Minimum 3-4 years ofexperience working in a bakery.

· Possess passion forbaking, a positive attitude and problem-solving skills.

· Detail-oriented andable to multitask.

· Ateam player and willing to learn and adapt.
