Sommelier (Japanese Fine Dining)

About the Role

We are seeking an experienced and passionate Sommelier to lead our fine wine programme and deliver an exceptional dining experience. The ideal candidate will have a strong appreciation for fine wines, expertise in food and wine pairing, and a commitment to providing impeccable service in a Japanese fine dining setting.

Key Responsibilities

  • Curate, manage, and continuously develop the restaurant's fine wine collection.
  • Recommend and present wine pairings that complement the chef's seasonal menus and signature dishes.
  • Deliver professional tableside wine service, including decanting and proper wine presentation.
  • Maintain wine inventory, cellar organisation, stock control, and supplier relationships.
  • Monitor wine costs and assist in purchasing and menu planning.
  • Conduct wine education and service training for the front-of-house team.
  • Collaborate closely with the culinary team to create memorable food and wine pairing experiences.
  • Ensure the highest standards of hospitality and personalised guest service.

Requirements

  • Minimum 3 years' experience as a Sommelier in a fine dining restaurant.
  • Recognised wine certification (WSET, CMS, ASI, or equivalent) is highly preferred.
  • Strong knowledge of Old World and New World wines, vintages, grape varieties, and wine regions.
  • Excellent understanding of wine service, storage, and food pairing.
  • Professional, well-groomed, and passionate about hospitality.
  • Strong communication and interpersonal skills.
  • Availability to work a six-day week including weekends.
