Restaurant Manager (Japanese Fine Dining)

Job Summary
We are seeking an experienced Restaurant Manager to lead daily operations at a Japanese fine dining restaurant. You will drive service excellence, lead the front-of-house team, manage guest relations, and ensure a memorable dining experience with strong operational and wine knowledge.
Responsibilities
- Lead daily restaurant operations to achieve exceptional service and hospitality standards
- Motivate and develop front-of-house staff to deliver outstanding guest experiences
- Manage reservations, guest relations, and resolve service issues professionally
- Maintain high standards of cleanliness, presentation, and operational efficiency
- Collaborate with the Executive Chef to coordinate seamless kitchen and service teamwork
- Recommend wines and assist with food and wine pairings to support the wine programme
- Monitor inventory, purchasing, and control costs for beverages and front-of-house supplies
- Train staff on service standards, menu knowledge, wine service, and customer engagement
- Ensure compliance with company SOPs, food safety, and workplace safety regulations
- Prepare staff schedules and manage daily manpower planning
Preferred competencies and qualifications
- Minimum 5 years’ managerial experience in a fine dining restaurant
- Experience in Japanese fine dining is highly preferred
- Good knowledge of fine wines, wine service, and food pairing
- WSET certification or equivalent is an advantage but not essential
- Strong leadership, communication, and problem-solving skills
- Passion for hospitality with a guest-first mindset
- Professional appearance and ability to perform in a high-end dining environment
- Availability to work a six-day week including weekends
