Job Summary

Oversee daily operations and drive commercial success while maintaining the highest service standards in a premium Teochew fine dining setting.

Responsibilities

  • Maintain and elevate premium service standards tailored to fine dining clientele to enhance guest satisfaction
  • Build and sustain long-term relationships with VIP guests to foster brand loyalty
  • Address and resolve customer feedback promptly with professionalism to ensure positive guest experiences
  • Manage restaurant P&L, labor costs, and operational budgets to optimize financial performance
  • Drive beverage and premium menu sales to increase average table spend and revenue
  • Analyze monthly sales data to develop and implement targeted strategies that boost revenue
  • Recruit, train, and mentor service staff on fine dining etiquette to ensure consistent service quality
  • Educate team members on Teochew culinary heritage, tea pairings, and ingredients to enrich guest engagement
  • Conduct daily pre-shift briefings to align team goals and focus on service excellence
  • Collaborate with the Executive Chef to ensure seamless coordination between kitchen and floor operations
  • Enforce compliance with Singapore food safety, hygiene, and SFA licensing regulations to maintain operational standards
  • Optimize inventory control for premium ingredients, fine wines, and Chinese teas to reduce waste and cost

Required competencies and certifications

  • Proficiency in English and Mandarin to communicate effectively with Mandarin-speaking stakeholders, guests, and suppliers
  • Strong financial literacy to manage budgets and analyze sales data
  • Sharp leadership abilities to recruit, train, and mentor staff effectively
  • Excellent crisis management skills to handle customer feedback and operational challenges
  • Flexible availability to work split shifts, weekends, and public holidays in Sentosa

Preferred competencies and qualifications

  • Minimum 3–5 years of experience in fine dining management, ideally within premium Chinese or Teochew cuisine concepts
  • Diploma or Degree in Hospitality, Culinary Arts, or Business Management
  • Knowledge of Teochew dialect as a strong advantage
