Central Kitchen - Production Supervisor

Job Scope:
- Supervise and coordinate daily food production activities in the central kitchen.
- Plan daily production activities according to production orders, delivery schedules and operational requirements.
- Allocate manpower and assign duties to production workers to ensure production targets are met.
- Monitor preparation, cutting, marinating, cooking, portioning, packing and labelling processes.
- Ensure food products are produced according to company specifications, recipes, portion sizes and quality standards.
- Monitor the proper use of production machinery and equipment and ensure safe operating procedures are followed.
- Ensure compliance with food safety, hygiene, sanitation and Workplace Safety and Health requirements.
- Conduct checks on raw materials, work-in-progress and finished products and report any quality issues or abnormalities.
- Monitor chiller, freezer, cooking and food-handling temperatures where required.
- Ensure proper storage and handling of raw materials and finished products.
- Maintain production, temperature, cleaning and other operational records accurately.
- Monitor ingredient usage and minimise production wastage.
- Coordinate with Warehouse, Quality Assurance and Logistics teams to support smooth production and delivery operations.
- Train and guide production workers on SOPs, food hygiene, equipment operation and work procedures.
- Ensure production areas, equipment and utensils are properly cleaned and maintained.
- Assist in inventory checks and ensure sufficient ingredients and production materials are available for daily operations.
- Identify production issues and recommend improvements to productivity, workflow and food quality.
- Assist management in implementing and maintaining production SOPs and food safety requirements.
- Perform other production and operational duties assigned by Management.
- Diploma or relevant qualification in Food Science, Food Manufacturing, Culinary, Hospitality, Operations or a related field is preferred.
- Relevant experience in food manufacturing, central kitchen, catering or food production operations.
- Experience supervising production staff is an advantage.
- Knowledge of food hygiene, food safety and production procedures.
- Able to organise manpower and manage daily production schedules.
- Able to work in a fast-paced food manufacturing environment.
- Good communication, coordination and problem-solving skills.
- Able to work independently and as part of a team.
- Willing to work shifts, weekends or public holidays when operationally required.
